As JayP said, do a forum search and there are a few threads on this subject, personally I'm off to the Cook Islands. Looking for cheap accomm, fresh trade winds, flat water, sunshine, good friends and to eat a bucket load of fresh seafood.
Just brilliant team. Thanks for the kick start. I am now leaning towards the Cook islands. PNG sounds exquisite so have tucked that one away for future reference.
I am a learner so I am also seeking out tuition whilst whereever. If any of you have someone or some organisation on any of the many mentioned islands above I'd also love to hear about them.

hey BM I learnt to kite in Sandy Pt Vic from Tony of RALinnovations. I see you mention some instruction, I could windsurf but I still needed to learn a lot! Tony was a great instructor, kept it simple, no fuss but really helped me to learn right the first time.
From that experience I'd say he knows the good spots to go and I know he runs a Figi trip.
I'm not sure of details but he has a website and jumps on these forums sometimes too. there was some mention of (safe) at sea launch from a boat and massive down winders which does sound pretty good I must admit :) and he's mates with some locals so can give you the inside info on exploring if it's not windy.

ive been to Aitutaki on the cook islands.
place is awesome.
majic island life just sitting around or crusing around on scooters, and then a short trip by boat out to a couple of islands in the atoll to kite, in the most fabulous water.
people there are terrific.
cheap place to stay.
plenty of hotels

I also recomend Deane from Auckland Kitesurf Centre.
Last year during winter i spent 10 days with Deane and a group of other kiters on Aitutaki (Cook Islands). Fabulous location with a beautiful turquoise logoon. Great kiting for all levels, shallow bays for beginners and big downwinders for the more experienced and good conditions to practice new moves. I went in August when the trade winds blow.
I travelled with a conmpany called Auckland Kitesurf Centre. They run 10 day or 2 week holidays. The accomodation was ideally situated for swimming and chilling by the resort and spa.
Water taxis took you to the outer islands on the windy days and your scooter was included . BBQ meals where shared as a group keeping the meal costs down.
Deane also organised other activities when there was no wind, beach volley ball , sup etc.
The scuba diving is also very good as well.
I've been working over in New Caledonia for a few years. Kite surfing is very popular over there. Some of the guys I work with are keen kite surfers. They reckon that New Cal has some of the best places for kitesurfing. A lot of the island is very much untouched with crystal clear waters.
Unfortunately New Caledonia is horrendously expensive compared to Aus. Surprisingly, kite surfing gear is about the only thing that is the same price as Aus. Lessons seem cheaper. I think due to the huge popularity of the sport over there.
The guys at work told me that September - December are the best months. There is constant breeze everyday.
