I've used 1 fin on my board no matter what the sail size , 5.6 to 7.5 how much difference does it make.also I've heard about lift from the fin, what is that all about ? what are your thoughts.

I'm no expert on this and others on the forum will no doubt give their opinion but if the fin you are using is the right size, I would of thought it would cover the sail sizes you have listed. I have two fins but only because the two boards have different deck fittings.
If your fin is too small for your sail, you will get spin-out and the board will not steer high enough into the wind, if the fin is too large however, you will get tail walking where the board rises up on the fin and is just too unstable to ride.
Experts, please elaborate.

The fin style, shape and size will make a difference to the amount of lift a fin generates. Your board size & type, and sail size will govern the thype and size of fin (s) to use.
