Hi, I recently removed the pads on my windsurfboard as its a summer project to get it looking dude again. Anyone know what kind of adhesive i should use to re-apply them??

Contact adhesive.
Clean the deck thoroughly, read the directions and apply.
Should last for years 
Yes as nebbs said ^^^^^^2 3 4 things -
1) Be sure to let it dry enough before sticking it down.
2) Once its down its down. You can't slide the pads into position on the surface.
3) EVA pads expand a bit with contact adhesive on them. They eventually shrink again so expect gaps to open up at abutting edges.
4) Clean up the excess carefully with acetone. Messy jobs look really daggy after a while.
One thing I found with contact adhesive is you don't get a second chance when sticking it down. I started using wooden skewers in the footstrap screw holes to guide the pads back into the right position. There's probably a better way to do it, but that's all I had on hand.
I still can't get it exactly right though and they 'almost' line up.

Do heaps of them, use Quikgrip,,
Paint on both surfaces, i use a heat gun to dry it faster, when it's almost dry, touch it with your finger should be tacky but not fully set, smack it on.
Make sure the edges are fully stuck especially the front edges. So water won't get under and peel them off.
Tape pads down with masking tape for a few hours. finito...
O yer don't leave the tape on for ever, sometime your pads stay squished down..
What P.C. said is pretty much spot on. Careful with the heat gun though. I've had a few repairs come in recently where people have been a bit enthusiastic with the heat gun. Not pretty.
